Scale
Main Ingredients
- 16 ounces refried beans
- 3 ripe avocados (mashed)
- 1 lime (juiced)
- Salt and pepper (to taste)
- 1 cup sour cream
- 1 tablespoon taco seasoning
- 1 cup salsa
- 1 cup cheddar cheese (shredded, or Mexican blend)
- ½ cup black olives (sliced)
- ½ cup green onions (chopped)
- Tortilla chips (to serve)
Instructions
- Prepare the Bean Layer: Spread refried beans evenly as the first layer in a large serving dish, ideally an 8-inch square glass dish.
- Make Guacamole: Mash the avocados and mix them with lime juice, salt, and pepper to taste. Spread this mixture gently over the refried beans layer.
- Season Sour Cream: Combine the sour cream with taco seasoning until well blended, then spread this over the guacamole layer.
- Add Salsa and Cheese: Carefully spread salsa over the sour cream layer, then sprinkle the shredded cheddar cheese evenly on top of the salsa.
- Top with Olives and Green Onions: Scatter the sliced black olives and chopped green onions evenly over the cheese layer.
- Serve: Serve the assembled dip immediately with tortilla chips, or chill for an hour to let flavors meld before serving.
Notes
- Chilling the dip for an hour before serving enhances the flavor meld.
- You can add a layer of cooked, seasoned ground beef or shredded chicken for a meatier dip.
- Try different cheeses like Monterey Jack or pepper jack for a spicy twist.
- For a dairy-free version, substitute with dairy-free cheese and sour cream alternatives.
