Description

Zucchini Fries

  • 2 medium zucchini, cut into 3 inch x 1/2 inch sticks
  • ½ cup all-purpose flour
  • 2 tsp Italian seasoning

  • 1 tbsp water
  • ½ cup Italian breadcrumbs or panko breadcrumbs
  • ⅓ cup parmesan cheese, finely grated
  • Cooking spray


Instructions

  1. Slice zucchini: Cut the zucchini into 3 inch sticks approximately 1/2 inch thick, about the size of a french fry.
  2. Mix dry ingredients: In a large bowl, combine the all-purpose flour, Italian seasoning, salt, and pepper evenly.
  3. Prepare egg wash: In a separate medium bowl, whisk the two eggs with 1 tablespoon of water until pale yellow and smooth.
  4. Combine breadcrumbs: In another bowl, stir together breadcrumbs and grated parmesan cheese.
  5. Coat zucchini: Toss zucchini sticks in the flour mixture, shaking off excess flour, then dip each stick into the egg wash.
  6. Bread zucchini: Roll the zucchini sticks in the breadcrumb and parmesan mixture, ensuring an even coating.
  7. Preheat air fryer: Spritz the bottom of the air fryer basket with cooking spray to prevent sticking.
  8. Arrange zucchini: Place coated zucchini fries in a single even layer in the basket, ensuring they do not touch, and spritz the tops with cooking spray.
  9. Air fry: Cook at 385 degrees Fahrenheit for 10 minutes until golden brown and crispy.
  10. Serve: Enjoy with your favorite dipping sauce as a tasty appetizer or snack.

Notes

  • Freezing is not recommended as zucchini’s high water content will cause sogginess upon thawing.
  • For baking, place a cooling rack inside a baking sheet to elevate the fries for better air circulation and crispness.
  • Spritz the top of baked zucchini fries with olive oil spray and bake at 425 degrees Fahrenheit for 22 minutes until golden and crispy.
