Description

Delight in this Cherry Chip Cake featuring a moist white cake mixed with chopped maraschino cherries and cherry juice, layered with a creamy cherry buttercream frosting. This vibrant dessert is perfect for gatherings and celebrations, offering a sweet cherry flavor in every bite.

Ingredients

Scale

Cake

  • 15.25 ounce white cake mix
  • 10 ounces maraschino cherries chopped, save juice (reserve some cherries for garnish)
  • ½ cup butter
  • 3 eggs
  • ½ cup milk
  • ½ cup cherry juice reserved from above

Cherry Buttercream Frosting

  • 2 sticks unsalted butter softened to room temperature
  • 2 pounds powdered sugar
  • 6 tablespoons milk
  • 2 tablespoons maraschino cherry juice from above

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it's ready for baking the cake pans.
  2. Melt Butter: Melt ½ cup of butter completely to incorporate smoothly into the batter.
  3. Prepare Cherries: Rinse and dry off your maraschino cherries thoroughly before chopping.
  4. Mix Cake Batter: In a large mixing bowl, combine the white cake mix, chopped cherries, melted butter, 3 eggs, ½ cup milk, and ½ cup reserved cherry juice. Stir until the batter is smooth and cherries are evenly distributed.
  5. Prepare Pans: Spray two 8 or 9 inch cake pans with non-stick spray to prevent sticking.
  6. Pour Batter: Divide the cake batter evenly between the two prepared cake pans.
  7. Bake Cake: Bake the cakes for 25 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool Cakes: Let the cakes cool slightly in the pans, then remove them onto a wire rack to cool completely before frosting.
  9. Make Frosting: In a large bowl, combine softened unsalted butter, powdered sugar, 6 tablespoons milk, and 2 tablespoons reserved maraschino cherry juice. Beat until smooth and creamy.
  10. Assemble Cake: Place one cooled cake layer on a cake plate, spread a generous amount of frosting on top, then place the second cake layer over it.
  11. Frost Cake: Frost the entire cake evenly with the remaining cherry buttercream frosting.
  12. Decorate: Using a piping bag fitted with a star tip, pipe frosting around the top and bottom edges of the cake.
  13. Garnish: Decorate with the reserved maraschino cherries on top.
  14. Serve: Slice into 16 pieces and enjoy!

Notes

  • To enhance cherry flavor, ensure you reserve enough cherry juice during preparation.
  • Allow cakes to cool completely before frosting to prevent melting the buttercream.
  • You can substitute maraschino cherries with fresh or frozen cherries if preferred, adjusting sugar in frosting accordingly.
  • Use non-stick spray or grease and flour the cake pans to ensure easy cake release.
  • For a more intense cherry taste in the frosting, add an additional tablespoon of cherry juice if desired.
