Description

  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Kosher salt to taste
  • Fresh ground black pepper to taste

  • 2 tablespoons olive oil, divided
  • 1 cup shredded provolone cheese


Instructions

  1. Cook the vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. When the oil is hot, add the sliced yellow onion, red bell pepper, and green bell pepper along with plenty of salt and fresh ground black pepper. Sauté the vegetables until very tender, then remove them from the skillet and place on a plate.
  2. Cook the chicken: Add the remaining 1 tablespoon of olive oil to the skillet. Add the thinly sliced chicken breasts along with Italian seasoning, smoked paprika, salt, and pepper. Spread the chicken out in a single layer and allow it to cook without stirring for a couple of minutes to develop a good brown crust.
  3. Finish cooking the chicken: Continue to sauté the chicken, stirring occasionally, until it is fully cooked through and no longer pink in the center.
  4. Combine ingredients: Add the cooked onions, bell peppers, and any accumulated juices back into the skillet with the chicken. Stir everything together until well combined.
  5. Melt the cheese: Sprinkle the shredded provolone cheese evenly over the top of the skillet ingredients. Cover the skillet with a lid and let it sit over low heat until the cheese is fully melted.
  6. Serve: Once the cheese is melted, remove the lid and serve the Chicken Cheesesteak Skillet hot and enjoy.
