Description

These Chipotle Cheddar BBQ Chicken Sliders combine tender shredded barbecue chicken with a smoky chipotle mayo and melty cheddar cheese, all nestled inside sweet Hawaiian rolls for the perfect savory and slightly spicy bite-sized sandwiches. Ideal for parties, game days, or casual dinners.

Ingredients

Scale

BBQ Chicken

  • 2 cups shredded boneless skinless chicken breast
  • 1 cup barbecue sauce

Chipotle Mayo

  • 1/4 cup mayonnaise
  • 1 chipotle pepper in adobo sauce
  • 1/2 teaspoon sweet paprika
  • 1 clove garlic, finely minced or crushed
  • 1/2 tablespoon chopped cilantro
  • pinch of salt

Sliders

  • 12 count Hawaiian sweet rolls
  • 12 slices cheddar cheese (orange)
  • 1/3 cup thinly sliced red onion
  • 1 tablespoon melted butter, plus more for serving
  • chopped parsley and chives, for serving

Instructions

  1. Prep and Toast the Rolls: Turn the oven to low broil. Slice the Hawaiian rolls in half and place on a lined baking sheet. Toast the halves, cut side up, watching carefully, until golden brown and toasted. Remove from the oven and then lower the oven temperature to 350 degrees Fahrenheit.
  2. Make the Barbecue Chicken: In a mixing bowl, combine the shredded chicken breast and barbecue sauce. Stir thoroughly until well combined and the chicken is evenly coated.
  3. Make the Chipotle Mayo: Add mayonnaise, chipotle pepper in adobo sauce, sweet paprika, minced garlic, chopped cilantro, and a pinch of salt to a food processor or blender. Blend until smooth and creamy, then transfer to a small bowl.
  4. Assemble the Sliders: Brush chipotle mayo generously on both sides of the toasted rolls. On the bottom halves, place 6 slices of cheddar cheese. Layer the barbecue chicken evenly over the cheese, followed by the thinly sliced red onion. Top the onions with the remaining 6 slices of cheddar cheese. Cover with the top halves of the rolls.
  5. Bake the Sliders: Brush melted butter over the top of the assembled rolls. Cover the baking sheet tightly with aluminum foil and bake at 350 degrees Fahrenheit for 10 minutes.
  6. Finish Baking: Remove the foil and continue baking the sliders for an additional 15 minutes, until the cheese has fully melted and the tops of the rolls are golden and toasted.
  7. Serve: Garnish the sliders with fresh chopped chives and parsley. Cut into individual sliders and serve warm.

Notes

  • Watch the rolls closely when toasting under the broiler to avoid burning, as broiler temps vary.
  • The chipotle pepper in adobo can be adjusted or omitted for less heat.
  • Use leftover cooked chicken or rotisserie chicken for convenience.
  • Brush extra melted butter on sliders just before serving for additional richness and shine.
  • These sliders can be made ahead and reheated covered with foil at 350°F until warmed through.
