Description

A festive Christmas Lasagna Dessert featuring a cookie-like red velvet base layered with creamy peppermint-cream cheese filling, vibrant green vanilla pudding, and whipped topping, perfect for holiday celebrations.

Ingredients

Scale

Red Velvet Base

  • 1 box Red Velvet Cake mix
  • ½ cup butter melted
  • 1 large egg

Cream Cheese Layer

  • 16 ounces Cream Cheese
  • ½ cup confectioners sugar
  • ¼ cup crushed peppermint candies
  • ¼ cup milk
  • 8 ounces Whipped topping

Green Pudding Layer

  • 2 ¾ cups milk divided
  • 2 boxes Vanilla Instant Pudding 5.1 ounce boxes
  • Green gel food coloring (5-6 drops or to desired color)

Topping

  • 8 ounces Whipped topping
  • Holiday colored sprinkles

Instructions

  1. Preheat and Prepare Pan: Preheat oven to 350° F and grease a 13×9 inch baking pan to prevent sticking.
  2. Make Red Velvet Base: In a large mixing bowl, combine the red velvet cake mix, melted butter, and egg. Use an electric mixer to blend thoroughly into a cookie-like batter, ignoring the cake mix box instructions.
  3. Bake Base: Pour the batter evenly into the prepared pan and bake for 15 minutes. Remove from oven and allow to cool for 30 minutes until completely cooled.
  4. Prepare Cream Cheese Layer: In a medium bowl, beat together cream cheese and confectioners sugar. Add ¼ cup milk and stir in 8 ounces of whipped topping and crushed peppermint candies until combined.
  5. Assemble Cream Cheese Layer: Spread the cream cheese mixture evenly over the cooled red velvet base. Refrigerate for 30 minutes to set.
  6. Prepare Pudding Layer: In a large bowl, whisk together remaining 2 ½ cups milk and two boxes of vanilla instant pudding until thickened. Add green gel food coloring starting with 5-6 drops, mixing until desired shade is achieved.
  7. Assemble Pudding Layer: Pour green pudding evenly over the cream cheese layer and refrigerate for at least 2 hours until set.
  8. Finish with Whipped Topping and Sprinkles: When ready to serve, spread the remaining 8 ounces whipped topping over the pudding layer. Decorate the top with holiday colored sprinkles for a festive touch.

Notes

  • Omit peppermint candies if you prefer a non-minty flavor.
  • Store the dessert covered in the refrigerator for up to 3-4 days to maintain freshness.
  • Make sure the base is completely cooled before adding cream cheese layer to prevent melting.
  • Adjust green food coloring gradually to achieve the perfect holiday green shade.
  • Use full-fat cream cheese and whipped topping for the creamiest texture.
