Ingredients
Scale
Vegetables
- 1 lb. green beans, fresh, trimmed
- 1 ½ lbs. Yukon gold potatoes, baby, cut in half
Meats and Fats
- 12 oz bacon, thick cut
- 4 tbsp butter
Seasonings
- 2 ½ tbsp ranch seasoning
- 1 tsp garlic powder
- salt and pepper, to taste
Instructions
- Boil Green Beans: Bring a medium pot of water to a boil, add the trimmed green beans, and cook until they turn bright green and are tender, approximately 5 minutes. Remove them using a slotted spoon and immediately place into a bowl of ice water to halt the cooking process.
- Cook Potatoes: After removing the green beans, add the halved Yukon gold potatoes to the boiling water and cook until fork-tender, about 10 minutes. Drain carefully once done.
- Cook Bacon: While the potatoes cook, heat a large skillet over medium-high heat. Add the thick-cut bacon pieces and cook until browned and crispy. Remove the bacon with a slotted spoon and place on a paper towel-lined plate to drain excess fat. Set aside.
- Brown Potatoes: Drain the potatoes and add them to the same skillet with bacon drippings over medium-high heat. Stir frequently to brown the potatoes evenly on all sides.
- Add Flavor and Combine: Once the potatoes are golden brown, reduce the heat to medium. Add butter, the blanched green beans, ranch seasoning, and garlic powder. Stir carefully to coat everything evenly with the seasonings and melted butter.
- Finish and Serve: Return the crispy bacon pieces to the skillet, stirring to combine all ingredients. Season with salt and pepper to taste. Serve warm and enjoy your country ranch potatoes with green beans.
Notes
- Using Yukon gold potatoes provides a creamy texture and holds up well during browning.
- Blanching the green beans first ensures vibrant color and tenderness without overcooking during the final skillet step.
- Adjust ranch seasoning amount based on your preference for more or less intense flavor.
- For a lower fat version, consider using turkey bacon and reducing butter amount.
- Make sure to use a large enough skillet to allow potatoes to brown evenly without overcrowding.
