Oatmeal
- 1 cup rolled oats
- 3.5 cups almond milk
- 2 tbsp maple syrup
- 2 tbsp solid coconut oil
- 1 tbsp almond butter
- 1 tsp cinnamon

Apple Topping
- 2 small honeycrisp apples, peeled and chopped
- 1 tbsp coconut oil
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
Instructions
- Cook the oatmeal. In a sauce pot, combine rolled oats and almond milk. Place over medium-high heat and bring to a rolling boil. Once boiling, reduce heat to medium and cook, stirring occasionally, for 15 minutes or until the oatmeal is creamy.
- Add flavorings. Turn off the heat and stir in maple syrup, solid coconut oil, almond butter, cinnamon, and a pinch of salt until fully combined and creamy.
- Prepare the apple topping. In a separate saucepan over medium heat, add coconut oil. Once melted, add chopped apples, maple syrup, and cinnamon. Cook while stirring occasionally for 6 minutes or until the apples have softened.
- Serve. Divide the oatmeal into 8 bowls and top each serving with the warm cinnamon-spiced apples.
Notes
- You can substitute almond milk with any other plant-based milk or dairy milk according to your preference.
- Adjust maple syrup quantity for sweetness level.
- For extra texture, add nuts or seeds as toppings.
- Use any sweet apple variety for the topping to achieve a similar flavor.
- If oatmeal thickens too much, add a splash of milk to loosen it.
