Meat
- 1/2 pound bacon
- 4 boneless skinless chicken breasts, about 3 pounds
Seasonings
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Toppings & Mix
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/4 cup sliced green onions, divided
- 1/4 cup slivered almonds, divided
Instructions
- Prepare and Preheat: Spray a 9x13x2 inch baking dish with cooking spray and preheat your oven to 400 degrees Fahrenheit to get ready for baking.
- Cook Bacon: Cook the bacon until crispy, then chop it into small pieces and set aside for the topping mixture.
- Tenderize and Season Chicken: Pound the chicken breasts with a meat tenderizer until evenly about ½ inch thick. Season all sides with salt, pepper, and paprika to enhance flavor.
- Mix Topping: In a bowl, combine the cooked chopped bacon, softened cream cheese, sour cream, shredded cheddar cheese, garlic powder, onion powder, 2 tablespoons of sliced green onions, and 2 tablespoons of slivered almonds until well mixed.
- Assemble: Place the seasoned chicken breasts in the prepared baking dish. Evenly spread the creamy bacon-cheese mixture on top of each breast.
- Bake: Bake in the preheated oven for 20 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Remove from oven and let rest for a few minutes.
- Garnish and Serve: Sprinkle the remaining 2 tablespoons each of sliced green onions and slivered almonds over the top for garnish and added crunch before serving.
Notes
- You can substitute slivered almonds with chopped pecans or walnuts for a different crunch and flavor.
- Make sure to let the chicken rest a few minutes after baking to keep it juicy when serving.
- Use full-fat cream cheese and sour cream for the richest taste, but low-fat versions can be used for a lighter dish.
- Check internal temperature with a meat thermometer to ensure the chicken is cooked safely to 165°F.
- Serve with steamed rice, cooked pasta, or fresh vegetables to complete the meal.
