Ingredients
Scale
Chicken
- 2 large boneless skinless chicken breasts
- 1 cup buttermilk
- ¾ cup flour
- 2 teaspoons seasoned salt
- ½ teaspoon black pepper
- 2 large eggs, whisked
- 1 ½ cups breadcrumbs
- ¼ cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- ½ cup olive oil
- 2 tablespoons butter
- 6 slices provolone cheese
- ½ cup marinara sauce
- 18 frozen mozzarella sticks
- 6 slider buns
Butter Topping
- ¼ cup butter, melted
- 1 teaspoon sea salt
- ¼ teaspoon garlic powder
- ¼ teaspoon Italian seasoning
- 1 tablespoon fresh parsley
- 1 tablespoon Parmesan cheese, grated
Instructions
- Prepare Chicken: Butterfly the chicken breasts and cut the seam to create two thinner slices each about ¾ inch thick. Use wax paper and a meat pounder as necessary to flatten the chicken evenly. Cut each piece in half or thirds to match the slider bun size.
- Marinate: Place the buttermilk in a thick gallon freezer bag. Add the chicken pieces and marinate for at least 30 minutes or up to overnight in the refrigerator.
- Breading Setup: Prepare three separate bowls: Bowl 1 with flour, seasoned salt, and black pepper; Bowl 2 with whisked eggs; Bowl 3 with breadcrumbs, grated Parmesan cheese, and chopped fresh parsley.
- Bread the Chicken: Remove chicken from marinade letting excess drip off. Dredge each piece in flour mixture, then dip briefly in eggs, then coat thoroughly in breadcrumb mixture. Set aside.
- Bake Mozzarella Sticks: Preheat oven to 450 degrees Fahrenheit. Bake frozen mozzarella sticks for 7 minutes, then remove and set aside.
- Cook Chicken: Reduce oven temperature to 350 degrees Fahrenheit. Heat olive oil and butter in a skillet over medium-high heat. Pan-fry the breaded chicken pieces until golden brown, about 4 minutes per side. Remove from heat.
- Assemble Sliders: Arrange the bottom slider buns in a casserole dish. Place cooked chicken on each bun bottom. Spoon marinara sauce over the chicken. Add a slice of provolone cheese and place three baked mozzarella sticks on top.
- Top and Prepare for Baking: Cover with the slider buns on top.
- Make Butter Topping: In a small bowl, mix melted butter, sea salt, garlic powder, Italian seasoning, fresh parsley, and Parmesan cheese. Brush this butter mixture generously over the tops of the buns.
- Bake Sliders: Cover the casserole dish with foil and bake for 8 minutes. Remove the foil and bake for an additional 3 minutes until the tops are golden brown and the cheese is melted.
- Serve: Remove from oven and serve warm. Enjoy your delicious Chicken Parmesan Sliders!
Notes
- Slider buns used are approximately 4 inches in diameter; store-bought or bakery buns work well.
- Buttermilk substitute options include: 4 tablespoons milk + enough sour cream to make 1 cup, 2 tablespoons milk + enough plain yogurt to make 1 cup, or acidic milk preparations with vinegar or lemon juice allowed to curdle before use.
- To ensure even cooking, pound chicken to uniform thickness about ¾ inch.
- For a crispier crust, let breaded chicken rest briefly before frying.
- Frozen mozzarella sticks can be substituted with fresh mozzarella sticks or slices for different texture.
- Baking time and temperature ensure buns are buttery and slightly toasted, enhancing flavor.
