Instructions
- Prepare Pan and Feta: Spray a small frying pan or skillet with cooking oil, then crumble the feta cheese evenly across the pan including near the edges.
- Sauté Feta: Heat the pan over medium heat and allow the feta to sizzle and soften gently for about 2 minutes without burning, forming a crispy outer crust.
- Add Egg: Carefully crack the large egg into the center of the pan on top of the melted feta, then season the egg with dried oregano and red pepper flakes.
- Cook Egg: Cook the egg until it reaches your preferred doneness, whether with a runny or medium yolk, letting the feta crust brown to a golden color.
- Warm Tortilla and Prepare Avocado: While the egg cooks, warm the tortilla using a gas stove, oven, or microwave. Smash the avocado onto the warm tortilla and drizzle with lemon juice.
- Assemble and Garnish: Once cooked, gently transfer the crispy feta and fried egg onto the avocado-covered tortilla using a spatula, then top with pickled onions and a drizzle of chili oil. Serve immediately.
