Description

Crispy Feta Fried Eggs combine the creamy saltiness of feta cheese with perfectly cooked fried eggs served atop a warm tortilla spread with smashed avocado and a squeeze of lemon juice. This quick and flavorful breakfast or brunch dish is garnished with pickled onions and chili oil for an extra kick.

Ingredients

Scale

Main Ingredients

  • 1 large egg
  • ¾ oz / 20 g feta cheese
  • 1 small tortilla or slice of toasted bread
  • ¼ avocado

Seasonings & Garnishes

  • Dried oregano, to taste
  • Red pepper flakes, to taste
  • Cooking oil spray or olive oil spray
  • Lemon juice, to taste
  • Pickled onions, for garnish
  • Chili oil, for garnish

Instructions

  1. Prepare Pan and Feta: Spray a small frying pan or skillet with cooking oil, then crumble the feta cheese evenly across the pan including near the edges.
  2. Sauté Feta: Heat the pan over medium heat and allow the feta to sizzle and soften gently for about 2 minutes without burning, forming a crispy outer crust.
  3. Add Egg: Carefully crack the large egg into the center of the pan on top of the melted feta, then season the egg with dried oregano and red pepper flakes.
  4. Cook Egg: Cook the egg until it reaches your preferred doneness, whether with a runny or medium yolk, letting the feta crust brown to a golden color.
  5. Warm Tortilla and Prepare Avocado: While the egg cooks, warm the tortilla using a gas stove, oven, or microwave. Smash the avocado onto the warm tortilla and drizzle with lemon juice.
  6. Assemble and Garnish: Once cooked, gently transfer the crispy feta and fried egg onto the avocado-covered tortilla using a spatula, then top with pickled onions and a drizzle of chili oil. Serve immediately.

Notes

  • Use a non-stick skillet for easier flipping and less sticking of feta cheese.
  • If you prefer, substitute tortilla with a slice of toasted bread for a different texture.
  • Adjust red pepper flakes to control the spice level.
  • Pickled onions can be replaced with thinly sliced fresh onions for a milder flavor.
  • Olive oil spray works well but regular oil can be used sparingly to prevent sticking.
