Ingredients
Scale
Potatoes and Seasoning
- 2-3 large russet potatoes, washed, sliced into ⅛-inch thick rounds (about 2 pounds)
- 3 tablespoons extra virgin olive oil
- 2 teaspoons kosher salt
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
Toppings
- 2 cups (226 g) shredded sharp cheddar cheese
- 8 slices thick-cut bacon, cooked and crumbled
- 1 large jalapeno pepper, seeded, diced for garnish
- 2 Roma tomatoes, diced for garnish
- ¼ cup sour cream, for garnish
- 1 medium shallot, diced for garnish
- 2 green onions, diced for garnish
Instructions
- Preheat Oven: Preheat your oven to 450 degrees Fahrenheit and line two baking sheets with parchment paper to prepare for baking the potatoes.
- Make Seasoning Mixture: In a small bowl, combine the kosher salt, paprika, garlic powder, and black pepper to create a flavorful seasoning mix.
- Coat Potatoes: In a large bowl, toss the sliced potatoes with the olive oil and seasoning mixture, stirring well to ensure all slices are evenly coated.
- Arrange Potatoes: Spread the seasoned potato slices in a single layer on the prepared baking sheets, ensuring no overlapping for even crisping.
- Bake Potatoes: Bake the potatoes for 20 minutes, then carefully flip each slice and continue baking for an additional 9 minutes or until they turn golden brown and crisp.
- Combine and Add Toppings: Remove all potatoes from the oven and combine them onto one baking sheet. Sprinkle evenly with shredded cheddar cheese and crumbled bacon.
- Melt Cheese: Return the baking sheet to the oven and bake for 4 minutes or until the cheese is fully melted and bubbly.
- Garnish and Serve: Remove from oven and top with diced jalapeno, tomatoes, sour cream, shallots, and green onions. Serve immediately for the best flavor and texture.
Notes
- For air fryer preparation, season the potato rounds and place them in the air fryer basket, cooking at 360 degrees Fahrenheit for 15 minutes, flipping every 5 minutes for even crisping.
- After air frying, top the potatoes with cheese and bacon, then air fry again for 1-2 minutes until the cheese melts.
- Line the air fryer basket with parchment paper to prevent sticking and simplify cleanup.
- Adjust seasonings to taste, especially if you prefer spicier nachos; consider leaving some jalapeno seeds for more heat.
- Use thick-cut bacon for added texture and flavor; you can substitute with turkey bacon for a leaner option.
