- 15 ounce can black beans drained and rinsed
- 1/2 cup frozen corn
- 2 tablespoons chopped cilantro
- 15 ounce jar salsa
- 1 cup shredded colby jack cheese
- 10 tortilla chips
Instructions
- Preheat Oven: Preheat your oven to broil to get ready for melting the cheese on top of the skillet.
- Cook Turkey: Heat a 12-inch skillet over medium-high heat. Add olive oil and swirl to coat. Add ground turkey and crumble it as it cooks.
- Sauté Vegetables and Season: Push turkey to one side. Add diced onion and red bell pepper to the other side. Sprinkle salt, pepper, chili powder, cumin, garlic powder, and smoked paprika. Sauté vegetables while continuing to crumble and cook the turkey until fully cooked.
- Add Remaining Ingredients: Stir in black beans, frozen corn, diced green chiles, chopped cilantro, and salsa. Mix everything well and heat through.

- Garnish and Serve: Remove from oven, garnish with extra cilantro if desired, and serve warm.
Notes
- Use lean ground turkey for a healthier option and less grease.
- Substitute black beans with pinto beans if preferred.
- Adjust spice levels by increasing or decreasing chili powder and smoked paprika.
- For a vegetarian version, omit turkey and add extra beans or lentils.
- If you don't have a broiler, you can place the skillet in a hot oven at 425°F for cheese melting.
- Serve with sour cream, avocado, or extra salsa for added flavor.
