Instructions

  1. Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and sugar using a mixer for 4 minutes or until the mixture is light and fluffy.
  2. Add Wet Ingredients: Beat in the creamy peanut butter, large egg, and vanilla extract for 1 more minute until fully combined.
  3. Combine Dry Ingredients: Fold in rolled oats, flour, baking soda, and salt. Stir gently just until all ingredients are blended together. Then fold in chocolate chips and 3/4 cup of the red and green holiday M&M's, reserving 1/4 cup of M&M's for topping after baking.
  4. Chill Dough: Tightly wrap the cookie dough and chill it in the refrigerator for 30 minutes to firm up and enhance flavor.
  5. Preheat Oven and Prepare Baking Sheet: Once dough is chilled, preheat the oven to 365 degrees Fahrenheit. Scoop cookie dough onto a light-colored baking sheet, spacing each cookie at least two inches apart to allow spreading.
  6. Bake Cookies: Bake cookies for 9 to 10 minutes until edges are set but centers remain soft.
