Garlic Parmesan Butter

  • 1 pound salted butter, softened
  • 5 cloves garlic, grated
  • ½ cup finely grated parmesan cheese
  • 1 lemon, zest and juice
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • ¼ cup fresh parsley, finely chopped, optional, for serving

Chicken Skewers

  • 3 pounds boneless, skinless chicken thighs, cut into 2-inch strips
  • 2 teaspoons salt
  • ½ teaspoon black pepper


Instructions

  1. Prepare garlic parmesan butter: Melt the butter in a medium-sized bowl, then add the grated garlic, parmesan cheese, lemon zest, lemon juice, salt, and red pepper flakes. Stir until fully combined. The butter sauce may firm up as you proceed, which is normal.
  2. Trim skewers: Cut wooden skewers to fit your air fryer using poultry shears or heavy-duty scissors for clean cuts.
  3. Assemble skewers: Thread 6-7 pieces of chicken thigh strips tightly onto each skewer. Repeat until all chicken is used. Season the skewers evenly with salt and black pepper.
  4. Brush butter and cook: Use a basting brush to coat all sides of each skewer generously with the garlic parmesan butter. Place the skewers in the air fryer at 350°F.
  5. Air fry in intervals: Cook for 5 minutes, then remove skewers and baste again with the butter. Return to air fryer for another 5 minutes. Baste once more and cook a final 5 minutes for a total of 15 minutes. The chicken should be golden brown and cooked through.
  6. Serve: After cooking all skewers, pour any remaining garlic parmesan butter from the air fryer over the chicken. Garnish with fresh parsley if desired and serve with lemon wedges. Enjoy!
