  • 4 slices mozzarella cheese
  • 4-5 tablespoons balsamic glaze

Instructions

  1. Prepare Tomato Basil Topping: In a medium sized bowl, combine diced tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir well to combine and set aside to marinate flavors.
  2. Prepare Chicken: Pound chicken breasts to even thickness if desired for uniform cooking, or leave them whole. Coat each chicken breast evenly with olive oil on all sides.
  3. Season Chicken: In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Rub this seasoning blend evenly over both sides of each chicken breast.
  4. Grill Chicken: Heat grill to high heat. Place the chicken breasts on the grill and cook for 8 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through.
