Tomato Basil Topping

- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 4 slices mozzarella cheese
- 4-5 tablespoons balsamic glaze
Instructions
- Prepare Tomato Basil Topping: In a medium sized bowl, combine diced tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir well to combine and set aside to marinate flavors.
- Prepare Chicken: Pound chicken breasts to even thickness if desired for uniform cooking, or leave them whole. Coat each chicken breast evenly with olive oil on all sides.
- Season Chicken: In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Rub this seasoning blend evenly over both sides of each chicken breast.
- Grill Chicken: Heat grill to high heat. Place the chicken breasts on the grill and cook for 8 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through.
