Sausage and Vegetables

  • 4 mild or spicy Italian sausages
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 yellow onion thinly sliced
  • 1 tablespoon olive oil
  • Salt & ground black pepper to season

Toppings and Serving

  • ½ cup marinara sauce or your favorite store bought sauce
  • ½ cup shredded mozzarella cheese
  • 4 buns or rolls of choice
  • Fresh basil for garnish if desired


Instructions

  1. Preheat Grill: Preheat the grill to medium heat to prepare for cooking both sausage and vegetables.
  2. Prep the Veggies: In a medium bowl, toss the sliced red and yellow bell peppers along with the yellow onion with olive oil and season with ½ teaspoon salt and ½ teaspoon ground black pepper. Set aside for grilling.
  3. Grill the Sausage: Place the Italian sausages directly on the grill grates and cook for 5-7 minutes per side until fully cooked through. Transfer cooked sausages to a plate and tent with foil or place over indirect heat on the grill to keep warm.
  4. Grill the Vegetables: While sausages cook, place the seasoned peppers and onions in a grill basket over medium heat. Grill for 7-10 minutes, tossing often, until vegetables are softened and have a nice char.
  5. Assemble the Rolls: Place one cooked sausage in each bun or roll. Top with a generous portion of grilled peppers and onions, then add 2 tablespoons of marinara sauce and sprinkle with shredded mozzarella cheese.
  6. Melt the Cheese: To melt the cheese, place the assembled rolls on the grill using indirect medium-high heat for 1-2 minutes or alternatively place under a broiler for 1-2 minutes until cheese is melted and bubbly.
