Instructions
- Make the Peppermint Dough: In the bowl of a stand mixer or a large bowl with an electric hand mixer, combine the sweetened condensed milk and peppermint extract. Slowly add the powdered sugar one cup at a time, beating until a stiff dough forms that can hold its shape.
- Shape the Patties: Using a cookie scoop, form 1-inch balls (about ping pong ball size) and place them on a baking sheet lined with a non-stick mat or parchment paper. Gently press each ball down to flatten into patties.
- Dry the Patties: Allow the patties to dry for 2 hours at room temperature. Flip them once halfway through drying to ensure even drying on both sides.
- Melt the Chocolate: When the drying time is nearly complete, place the chocolate chips and coconut oil in a saucepan over medium heat. Stir continuously as the chocolate melts, then remove from heat once smooth.
- Coat the Patties: Dip each dried peppermint patty into the melted chocolate, fully coating it. Place the coated patties back onto the lined baking sheet.
- Add Sprinkles and Set: While the chocolate coating is still wet, gently press Christmas sprinkles onto the top of each patty. Allow the chocolate to set at room temperature or in a cool spot until firm before serving.
