Honey Ginger Simple Syrup
- 1/3 cup honey
- 1 cup water
- 1 medium piece fresh ginger, peeled and sliced
Lemonade
- 1 1/2 cups freshly squeezed lemon juice (Meyer lemons recommended)
- 4 cups water
- Fresh mint leaves for garnish
- Ice cubes
Instructions
- Prepare syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Turn off the heat and add the honey and sliced ginger. Let the mixture steep for 20 minutes to infuse the flavors.
- Juice lemons: While the syrup is steeping, juice enough lemons to yield 1 1/2 cups of fresh lemon juice. Pour the juice into a large pitcher.
- Mix lemonade: Add 4 cups of water and ice cubes to the pitcher with the lemon juice. Strain the ginger slices from the honey syrup and add the syrup to the pitcher. Stir well to combine.
- Garnish and serve: Add fresh mint leaves to the lemonade for an aromatic touch. Refrigerate until chilled or serve immediately over ice.
Notes
- Adjust the amount of honey syrup according to desired sweetness.
- Use Meyer lemons for a sweeter, less tart flavor; regular lemons can be substituted if unavailable.
- The ginger can be re-steeped once more for a stronger flavor before discarding.
- For a sparkling version, replace still water with sparkling water before serving.
- Store leftovers in the refrigerator and consume within 2 days for best freshness.
