Instructions
- Infuse milk with green onions: Add the sliced green onions to the milk in a small saucepan and bring to a gentle boil over low heat. Remove from heat and let the green onions steep in the milk to infuse their flavor while you prepare the potatoes.
- Cook the potatoes: Place the peeled and quartered potatoes into a pot of salted water and boil until they are very tender when pierced with a fork, about 15 minutes. Drain the potatoes thoroughly and return them to the pot to steam dry for 2 to 3 minutes.
- Mash and combine: Pour the hot infused milk over the potatoes and mash thoroughly until smooth and creamy. Add the unsalted butter and season well with salt and white pepper to taste. Mix until the butter is melted and fully incorporated.

- Choose starchy potatoes like Yukon Gold or Russet for the best creamy texture. In the UK, Maris Piper, King Edward, Vivaldi, or Desiree are excellent options.
- For a richer taste, use full-fat whole milk and unsalted butter.
- White pepper is preferred for seasoning to keep the mash visually white, but black pepper can be substituted if unavailable.
- Letting the potatoes steam dry before mashing improves texture by removing excess moisture.
