Description

A refreshing and tropical Pineapple Rum Punch cocktail featuring pineapple juice, coconut rum, and lemon-lime soda, perfect for summertime gatherings or casual sipping.

Ingredients

Scale

Main Ingredients

  • ¾ cup pineapple juice
  • ⅓ cup coconut rum (Malibu Original recommended)
  • ½ cup lemon-lime soda
  • ⅛ cup fresh lime juice
  • ⅛ cup simple syrup

Garnish

  • Fresh pineapple skewer
  • Ice cubes

Instructions

  1. Combine Ingredients: In a cocktail shaker or a large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake or shake vigorously to combine all ingredients well.
  2. Prepare Glasses: Fill two 12 oz. low-ball cocktail glasses three-quarters full with ice cubes.
  3. Pour Cocktail: Pour half of the cocktail mixture (approximately 1 cup) into each glass over the ice cubes.
  4. Garnish and Serve: Garnish each glass with a skewer of fresh pineapple pieces and serve immediately for the best flavor and chill.

Notes

  • Store any leftover punch in the refrigerator for up to 24 hours, but note that the ice will dilute the drink and the soda will lose its carbonation.
  • Substitute coconut rum with white or spiced rum if you prefer a different flavor profile.
  • Use mini 6 oz. cans of pineapple juice to avoid opening a large bottle and for easier measuring.
  • This recipe can be easily doubled or tripled for larger groups.
  • Do not add ice until ready to serve to prevent dilution.
  • Swap lemon-lime soda for ginger ale or lemon-lime sparkling water for a different twist.
  • Keep simple syrup on hand or make your own by heating equal parts sugar and water until dissolved, then cooling before storing in the refrigerator for up to two weeks.
