Description

Delicious and easy-to-make Reuben Egg Rolls combine classic corned beef, Swiss cheese, and sauerkraut wrapped in crispy egg roll wrappers. Perfectly cooked using your air fryer, stovetop, or oven, these egg rolls are served with tangy Thousand Island dressing for dipping.

Egg Rolls

  • 12 egg roll wrappers
  • 2 tablespoons oil (for cooking)
  • Thousand Island dressing (for serving)

Filling

  • 500 grams corned beef (approximately 10 slices), diced into bite-sized pieces
  • ½ cup Swiss cheese (or mozzarella cheese, approximately 5 slices), diced or shredded
  • ½ cup sauerkraut


Instructions

  1. Prepare the Filling: In a medium-sized bowl, combine the diced corned beef, diced or shredded Swiss or mozzarella cheese, and sauerkraut. Mix well until evenly combined.
  2. Assemble the Egg Rolls: Place 1 to 2 tablespoons of the filling in the center of each egg roll wrapper. Dip your finger in water and moisten the edges of the wrapper. Fold two opposite corners towards the center and then roll tightly to seal the egg roll.
  3. Air Fry Cooking Method: Brush both sides of each egg roll with oil. Air fry at 400°F for 10 minutes or until golden brown and crispy, flipping halfway if necessary.
  4. Stove Top Cooking Method: Heat oil in a deep pot over medium heat. Fry the egg rolls in small batches for 5 minutes or until golden brown and crispy. Drain on paper towels.
  5. Oven Baking Method: Brush the egg rolls with oil on both sides. Place on a sheet pan lined with foil or with a baking rack. Bake at 400°F for 15 minutes or until golden brown, flipping halfway through and adding more oil if needed.
  6. Serve: Let the egg rolls cool for 2 to 3 minutes before serving. Serve with Thousand Island dressing for dipping and enjoy.
