Marinade
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 cloves garlic peeled and minced
- 1 tsp minced ginger
- 3 tbsp dark soy sauce
- 3 tbsp honey
Skewers
- 2 chicken breasts (approx 350g/12.5 oz) chopped into bite sized pieces
- 1 red bell pepper chopped into large chunks
- 1 onion peeled and sliced into squares
- 1 tbsp sesame seeds
- small bunch of coriander/cilantro roughly torn
Instructions
- Prepare the marinade: Mix all the marinade ingredients in a small bowl by combining 1 tbsp vegetable oil, 1 tbsp sesame oil, 2 cloves garlic minced, 1 tsp minced ginger, 3 tbsp dark soy sauce, and 3 tbsp honey until well blended.
- Marinate the chicken: Place the chopped chicken breasts in a bowl and pour over three-quarters of the marinade, reserving the remaining marinade for brushing during cooking. Cover the bowl and refrigerate for 1 hour to allow flavors to develop.
- Prepare skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your BBQ or griddle until very hot.
- Assemble the skewers: Thread one piece of chicken onto each skewer, followed by a large chunk of red bell pepper, another chicken piece, and a slice of onion. Repeat to fill all skewers evenly, discarding any leftover marinade in the bowl.
- Cook the skewers: Place the skewers on the hot BBQ or griddle and cook for 8 to 10 minutes, turning 3 to 4 times for even cooking. Halfway through, brush the skewers with the reserved marinade. Check doneness by slicing open the largest chicken piece; it should be fully cooked with no pink inside.
- Finish and serve: Once cooked, sprinkle the skewers with sesame seeds and roughly torn coriander. Serve immediately with salad, rice, or potatoes for a complete meal.
Notes
- You can marinate the chicken up to a day ahead for more flavor, but avoid cooking ahead and reheating as it will dry out the meat.
- Cooked chicken skewers can be cooled and served cold as part of a salad or wrap.
- Substitute the red bell pepper and onion with mushrooms, red onion, courgette pieces, or pineapple chunks for variety.
- For some heat, add sriracha, chili powder, or chili flakes to the marinade.
