- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt or to taste
- Freshly ground black pepper to taste
Sloppy Joe Meat
- 1 pound lean ground beef
- 1/2 cup diced yellow onion
- 8 ounces tomato sauce
- 1/2 cup ketchup
- 1 tablespoon honey
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili powder
- 1 teaspoon dried mustard
- 1/4 teaspoon celery seed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt or to taste
- Freshly ground black pepper to taste
Other Ingredients
- Dill pickle slices
- Sliced red onion
Instructions
- Preheat and prepare sweet potatoes. Preheat the oven to 425° F and line a baking sheet with foil or parchment paper. Place the sweet potato cubes on the pan and drizzle with avocado oil, chili powder, garlic powder, salt, and pepper. Toss with your hands to coat evenly.
- Roast sweet potatoes. Roast the sweet potatoes in the oven for 30 minutes, tossing them halfway through to ensure even cooking, until tender and lightly browned.
- Cook beef and onions. While the sweet potatoes roast, heat a large skillet over medium-high heat and drizzle with a little oil. Add the ground beef and diced onion, crumble and cook until the beef is fully browned and the onions are tender.
- Add seasonings and sauce. Stir in chili powder, dried mustard, celery seed, garlic powder, salt, and pepper. Then pour in the tomato sauce, ketchup, Worcestershire sauce, and honey, mixing thoroughly to coat the meat evenly.
- Simmer sloppy joe mixture. Reduce heat to medium-low, and let the mixture simmer for 15 minutes, stirring occasionally, until the sauce thickens and flavors meld together.
- Assemble the bowls. Divide the roasted sweet potatoes and sloppy joe mixture evenly into serving bowls. Top with dill pickle slices and sliced red onions. Serve immediately while hot.
Notes
- For a spicier version, add a pinch of cayenne pepper or hot sauce to the sloppy joe meat mixture.
- You can substitute ground turkey or chicken for lean ground beef for a leaner option.
- Sweet potatoes can be roasted a day ahead to save time; reheat before serving.
- Use gluten-free Worcestershire sauce to make the recipe gluten-free if needed.
- Dill pickles and red onions add a tangy contrast but can be omitted or replaced with fresh herbs like parsley.
