Ingredients
Scale
Cookie Dough
- 1 cup butter softened (2 sticks)
- 3/4 cup white granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups unbleached flour
- 1 teaspoon baking soda
- 1 teaspoon table salt
- 12 oz mini semi-sweet chocolate chips
- 1 package holiday M&Ms or Peanut Butter M&Ms divided (use Peanut Butter M&Ms for this recipe)
Instructions
- Prepare Skillet: Preheat the oven to 325 degrees Fahrenheit and grease a 12-inch cast iron skillet thoroughly with butter to prevent sticking.
- Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, white granulated sugar, and brown sugar using a fork or a hand mixer until smooth and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract until fully incorporated.
- Combine Dry Ingredients: Gradually stir in the unbleached flour, baking soda, and table salt until the dough is evenly mixed without overworking.
- Mix in Chocolate and M&Ms: Fold in the mini semi-sweet chocolate chips and half of the holiday or peanut butter M&Ms, reserving the rest for topping.
- Press Dough into Skillet: Spread and press the cookie dough evenly into the greased cast iron skillet to form a level base.
- Initial Bake: Bake the cookie dough in the preheated oven for 25 minutes until the edges are lightly browned.
- Add Topping and Continue Baking: Remove the skillet from the oven, sprinkle the remaining M&Ms on top, pressing them gently into the dough, then bake for an additional 8 minutes until the center is set but still soft.
- Cool Before Serving: Take the skillet out of the oven and allow the cookie to cool in the skillet for 30 to 45 minutes to fully set the center. Serve warm, optionally with ice cream for a gooey treat.
Notes
- Use a well-seasoned 12-inch cast iron skillet for best results and even baking.
- Press the M&Ms into the dough after the initial bake to prevent them from melting too deeply and losing their shape.
- Letting the cookie cool properly is essential for the center to set without becoming hard.
- Serve warm with vanilla ice cream for a classic dessert pairing.
- You can substitute semi-sweet chocolate chips with dark or milk chocolate chips based on preference.
- If you don’t have a cast iron skillet, you can use an oven-safe round baking pan of similar size, but the texture may vary slightly.
